In fact, with his cropped hair and glasses he looks a bit professorial. He then takes the bowl inside, grabs a canister and out of that comes a spume of green gunk, a bit like a stiff mousse. "This is nitro green tea with lime." He then plunges the spoon into the liquid nitrogen, zooms the mousse around as if poaching an egg, scoops it out into his mouth and gulps it down like an oyster.
